a post about what i eat.

so at the start of the year, i became vegan. i had previously been vegetarian for about 8 years, and i just wanted more change.

the question i get most often is BUT WHAT DO YOU EAT? HOW DO YOU SURVIVE? etc, etc. and so i figured i’d answer thing 1.) because i love talking about food, 2.) because you see the question BUT WHAT DOES HE EAT all the time in this fandom (haha) and 3.) because i just came back from the grocery store.

so i’ll do this by meals, yeah?

Breakfast:

  • cereal (usually wheat cheerio like things) and soy/almond/rice milk. i lean toward almond or rice because i buy so many other soy products and i have issues with soy and agriculture (the way it’s taking over, monocultures, industrialization, it’s becoming the new corn).
  • cliff bars/other meal replacement bars - okay, i’m a bit lazy, but these are vegan, quick, and organic. and they fill you up.
  • FRUIT. fruit is awesome. i try to buy local and organic, because support your local small farms! reduce food miles! less pesticides! more sustainable practices!

Lunch:

  • i’m in university and i don’t have a bunch of time, so lunch is usually small but it almost always includes two things: fruit (see above) and hummus. hummus is great, nutritious, tastes amazing and with pita bread, it’ll fill you up and it tastes so good. there are so many flavors of hummus too! garlic, original, greek, red pepper, spicy, whatever. i can buy hummus made from a local restaurant here and that’s what i usually do.
  • during the weekends, sandwiches! put hummus, tomato, avocado on your sandwiches (and any other veggies) and you’re set. you have enough heavy stuff (hummus, avocado) that you don’t miss the cheese or mayo or whatever else people put on sandwiches

Dinner:

  • ok. so this is where you can get the most creative. pastas, rice, potatoes and quinoa are all good bases (rice is my personal favorite).
  • to get some protein add in tofu or tempeh or any other soy meat substitute (this is my least favorite, but if you’re not good at preparing tofu or tempeh it’s what you should start with). tofu and tempeh take time to get used to preparing. but a great comfort food is frying them up with some some garlic powder and onion, and omg if i’m having a bad day that’s my go to.
  • also: vegetables. you cannot forget the vegetables. peppers, squash, eggplant, are my favorites. zucchini and artichokes are also good. stir fry them, make a casserole, heat them up and mix them with pasta sauce or rice, and it’s great. or just grill them up! experiment around with them, and you’ll find the way you like them most. i promise  you. VEGETABLES ARE DELICIOUS. you just have to find the way to prepare them that’s best for you.

Snacks:

  • my number one snack is hummus and carrots and broccolialso,  pastas, rice, and quinoa (my favorites are cashews and peanuts), dried and frozen fruit (raisins, prunes, dates, cranberries, blueberries) are good things to mix together and snack on. edamame is also fantastic. oh! and olives! because i’m weird.

the keys to a good vegan diet are vegetables, fruit, a protein source, and then one of those carbohydrate back drops. fool around with them, and you’ll see what work for you, but seriously there are endless possibilities. and there is vegan ice cream and it is so good.

being vegetarian/vegan has actually made me healthier (i’m not longer anemic!) and just more aware of what i eat. i’m a pretty dedicated runner, and i have never felt fatigued due to my diet, you just have to keep eating smart. and i do believe eating smart also includes thinking about how how you eat effects the environment and the community around you. i personally am a big supporter of smaller local farm, and i want to give them a chance. i also know that my diet is a much more sustainable diet, and is less taxing on the earth. it’s activism through eating? what’s better.

of course it’s your own choice, and i personally am very happy eating what i eat and except for the times i walk by the cheese isle i don’t really miss cheese (ok rachel, shush). meat i don’t even remember anymore.

ok i’ll shut up now. i just like talking about food.
